





The sap runs when the nighttime temperatures fall below zero, and daytime temperatures are above zero.
We collect many buckets of sap, but 40 parts sap boils down to only 1 part syrup, so every drop of the finished syrup is precious! Maple sugaring has brought us joy and sweetness this year, when the back-and-forth between winter and spring has seemed to stretch on forever.
